Cheese With High Impact Beer

IPAs can be pretty high impact but I’m thinking here about the world of stout: thick, black big roasted flavor bordering on soy. Dark chocolate, coffee, plums, and dates are all common descriptors, with medium hoppy bitterness.

I think cheese first, blue second. Earthy, roasted nut, leathery blues (usually with a natural rind) create an experience like a piece of cheese and dark chocolate. French Fourme d’Ambert, English Stilton or Stichleton, or Jasper Hill Bayley Hazen are all solid starting places.
